Sausage & Beans with Rice


2/3 cup chopped onion
1/2 cup chopped green pepper
1 tablespoon minced garlic
1 tablespoon vegetable oil
1 pound smoked sausage, cut into 1/4-inch slices
1 can (16 ounces) kidney beans, rinsed and drained
1 can (15-1/2 ounces) great northern beans, rinsed and drained
1 cup instant brown rice
1 cup vegetable broth
1/4 cup packed brown sugar
1/4 cup ketchup
3 tablespoons corn syrup
1 tablespoon Dijon mustard


In a large skillet, saute the onion, green pepper, and garlic in oil until onion is crisp-tender. Stir in the remaining ingredients. Pour into a greased 13 x 9 x 2 inch baking dish.

Cover and bake at 350 degrees for 15 minutes. Uncover; bake for 10-15 minutes longer or until liquid is absorbed and the rice is tender.
